    Chuckieb's recipe Meatball Soup

    This was absolutely delicious! We loved the broth, and the meatballs were just as flavorful;) Since I used ground turkey, I had to add breadcrumbs to the meat mixture, because the meatballs wouldn't stay together otherwise, also subbed oregano (thanks ODD ladies) for the Marjoram (always 1 ingredient short), and used Knorr Vegetable Bouillon cubes. I used fresh finely chopped Italian parsley for the meatballs as well..and topped with a little grated Parm before serving:). Very, very nice soup Janet, like Rick said, this recipe is a "keeper"!

    Joce, the camera did work after both Janet and I came up with the idea of using a small strip of duct tape to keep the battery lid closed..LOL I still haven't been able to locate another...so duct tape it is:-D

    2. Other reviews here: Soup Again This is exactly why I'm not sure the Soup and Biscuit threads are necessary and/or helpful. I doubt most people would have found the reviews that are only listed in those threads. No big deal. This needed it's own, separate review anyway.
    3. Glad you used breadcrumbs to hold the meatballs together and not small strips of duct tape.

    I agree with Joce (Good4U). I never think to check those threads for recipes previously made & reviewed before I post my review...The Beta Reviews list is easy to use, the recipes are in alphabetical order.

    I think I agree with the usefulness of the soup again thread. At first it was a good thing grouping the soup recipes together as I was making them. But now I believe it is getting to large and unweildy to be useful. Especially when searching for a made recipe since I don't know of an easy way to peruse through it. It has become tedious.
    Would not hurt my feelings at all if someone were to go through and make sure the recipes are posted in the IMI group then delete the soup again strings.

    I whipped this up tonight and it was Deeelicious! Just changed a couple minor things....I love marjoram, but it was almost 5 bucks for a little thing of it, so I just used oregano. Also had a parmesan rind in my cheese drawer I needed to use so I threw that in. I have about a hundred pounds of chopped up tomatoes in my freezer from my garden so I used some of those instead of the canned. One more thing lol, just an extra heaping Tbs of rice :) Added my pic. to the recipe, thanks Janet!!

    I used Knorr home-style concentrated stock, it works for 31/2 cups of water so I just used the one tub. I wanted to add some veggies to the broth because my son is fighting a cold and I didn't want to serve it with a salad; so I added a little chopped onion, celery, garlic and finely diced carrot (just like if I was making a sauce). I find the carrot helps counter act the acidity of the tomato (I'm sensitive to that!)
    Anyways, that's all I did differently. Next time I have a parm. rind I'll use that too! I topped it with Romano cheese, fresh basil and served it with garlic toast. I'll definitely make it again!! :)
