Melissa DArabian's Salmon Cakes

Wow, exactly what I was looking for! I had some leftover salmon so I used that in place of the canned, which I weighed out to be a tad bit over a pound, so added a little more of each ingredient. I never know how much a large potato is versus a medium one, etc. I wish it would give out a cup measurement also so that I could be more exact. I left out the sugar since my salmon was grilled with a slightly sweet sauce.

I put this recipe together up to right before forming the patties and threw it in the fridge while I took my son to karate. I think that helped with forming them, because they were still a little soft, but doable being in the fridge a few hours.

I was going to make some sort of sauce to go with these but I was just too tired and didn't. I actually didn't think they even needed one after eating! Great flavor and can't wait to eat the leftovers for lunch today :)

Awesome photo, Mommyluvs2cook! I love how they look crispy and golden brown. I agree with you when it comes to listing fresh produce in terms of large or small. Please give in terms of cups or weight.

Thanks ladies! I had these leftover today warmed up in the oven, not quite as crispy, but still good :)

Beautiful photo Michelle! I like salmon cakes but have not ventured to make my own yet. They would make a great sandwich on a bun with lettuce and some type of spread.
