Mex Ranchero Eggs

    *Made for the March "Green" Recipe Challenge"

    Found this recipe looking up eggs and avocado in the ingredient search. I was looking for my breakfast! I really enjoyed this! I cut this recipe down so I used 2 Roma tomatoes and cut X's in the bottom (Easy peeling) before boiling for a few minutes. Peeled and chopped up the tomatoes, but did not use all the cooking water while making the "salsa" because that would have been a ridiculous amount. Instead of blending the tomatoes in a blender, I just use a masher and mashed them up while they cooked down, took about 15 minutes to get it all to thicken up. Great flavors! My avocado was so ugly. Not even a bright green, more yellow-ish, it's so hard to find decent avocado's around here lately! Did not use the sour cream. Wish I would have made 2 eggs but I only made 1, over easy egg. I barely covered my crisped tortilla. Also there is no need for a cup of oil. I did only do one tortilla, but a cup is excessive, even for 4, and I just covered the bottom of the small skilled thinly. The ending result was delicious though and I have some extra salsa for breakfast tomorrow :) :)

    Well this is a pretty fun recipe Michelle. My hubby would really like this. I have a problem with removing the skins from tomatoes though before using them. I just don't get it. IMHO it is a heck of a lot of work and why? Tomato skins are good and contain fibre and I don't find they ruin a dish if they're included. I buy my avocados at Costco and they're always fantastic. I don't know where they get them from or how they handle them but they're always beautiful and last the longest. We wouldn't use sour cream either. Wow on a cup of oil. LOL. I even thought the cup of cilantro sounded excessive. I think I'd like to try this though. Thanks for bringing it to my attention!

    I was looking for avocados yesterday and they didn't look good here either. They're either too old or too woody. I think the ones I saw were from Peru?

    I'm not sure why the tomato skins got removed Janet, but I just went with it lol. Too bad I don't have a Costco membership, I'm dying for a nice avocado!!
