Newspaper Chili

    I made this on Feb.13th, in Keni's memory.
    I'm finally able to add it here, sorry for the long delay! (I finally have two arms now ;)

    Newspaper Chili
    This is one of the best chicken chili's I've made!
    I thought I had black beans and it wasn't until I had everything else done that I couldn't find them (I tore apart my pantry!) I did thin it out with a little chicken stock like recommended for using low liquid products.
    The Salsa verde I used had lot's of fired roasted jalepeno's in them so I didn't add the extra can of jalepeno's, but I did use green chilies as suggested (and used very little cayenne pepper for the kids)
    And finally, I topped with cheddar cheese instead of jack cheese as that's what I had on hand.
    All in all a fantastic, flavorful Chili that I'll make again and again!

    That looks most delicious Shona. (And glad to hear you have two arms back) :). I'd prefer the beans you used over black beans anyway. I bookmarked this to try. Love salsa verde and jalopenos and green chilies. :) YUM.

    We always have so much ground beef in our freezer that I never think of making chicken chili! This sounds so delicious though, beautiful picture Shona!!
