    One Dish Chicken Rice Bake
    Made for IMI2's January 2019 "Casserole" challenge.

    I enjoyed the recipe. Good 'ole comfort food. The rice is the best part becoming 'risotto like' in consistency and flavor. I however would have liked it more with a little more seasoning. I made homemade cream-of-mushroom soup and should have added more bouillon which would have added more flavor and salt but it still needed a little something more, not much though. All in all it was a good recipe. Easy too.

    My mom made something similar with cream of mushroom soup but with pork chops. I don't think she put any seasoning in hers...but then again she rarely seasons any of her food, LOL! ;)

    Good grub. Rubbed down chicken with salt and pepper for flavor enhancement. Used homemade mushroom soup mix. Added a bottle of peach mango chutney and the remainder of the container of mushrooms. Those two additions made the rice creamy without having to add any extra water. Plenty of flavor in this dish now.
