Peppermint Twist Cheesecake

    Recipe: Peppermint Twist Cheesecake

    I made this for my ladies bunco Christmas party and it did not disappoint. Everyone gave it rave reviews and some even asked if they could take a piece home. Even hubby liked it! It has just the right amount of peppermint and tastes like a York peppermint patty, but not as powerful as a peppermint patty. Drizzle with just a little chocolate ganache and it will put this over the top!

    This recipe called for a sour cream layer on top. I personally do not care for that kind of cheesecake, so I didn’t do that. However, I like what sour cream does for a cheesecake, so I added the sour cream to the batter. Cheesecakes are very forgiving and it didn't hurt it one bit. I also subbed cream for the half-n-half. The only thing I noticed about the cheesecake is that is has an “eggy” taste. If I were making this again, I would only use 3 eggs. Even the photos pick up the yellowish tint caused by the eggs.

    Baking Notes: I increased this recipe to fit in my x-large, 3” spring form pan. Due to pan size and volume, I did not follow the recipe’s baking instructions.

    Mommyluvs2cook, I used to love peppermint, but not so much anymore. Guess my tastes have changed. I had one of these at a Christmas party a few years ago and it was really good. Great for a special occasion.

    Oh my gosh, those are stunning photos, DIZ! I am totally burned out on peppermint (too many Girl Scout Thin Mints over the years ;)), but that looks like it would be good made with all vanilla extract, omitting the crushed up peppermint, and still decorating the top with peppermints candies. Good find!

    When I make a cheesecake calling for 2lbs of cream cheese, I use 3 eggs and one yolk. It's the white of the egg that gives off the "eggy" taste. I love sour cream inside cheesecakes too. :)

    Thanks again, everyone! We finished the last piece yesterday and it only improved with age. This one has been permanently placed in the cheesecake "keep" file.
