This was great! Not overwhelmingly great by any means, but certainly different than your average pancake. It has that tropical taste, but I think it could be upped a bit by adding some spices like cinnamon or nutmeg for example, and some flavouring like vanilla or even a spiced rum or coconut rum.
I like that the coconut is hidden inside the pancake so that it doesn't burn on the griddle. The batter thickened up quite a bit so I had to add a little water so that it was thin enough to cover the coconut before flipping. So with a double batch I ended up with ten pancakes rather than 8 pancakes (recipe calls for 4 pancakes). Also, Jo missed a measurement in the directions of how much batter to start with, I used a 1/4 cup measure and scooped each pancake by that.
I tried a few different toppings with this. I added rum extract to some maple syrup and that was good. Tried it with plain maple syrup and whipped cream and it was ok, but my favorite was with maple syrup, a spritz of lime, topped with toasted coconut. The only thing I wished I had was some extra chunks of pineapple. Some bites of pancake you couldn't taste the pineapple.
So overall a great pancake that could benefit from some extra flavour like spices or vanilla and I would make sure to have some extra pineapple on hand to serve it with. :)

YUM! Great photo, Cosmicmother! Love, love, love coconut! Pancakes are the one thing that I really miss not being able to eat grain. I wonder if they would be good with a pineapple sauce over the top.
