How to make it

  • Mash the pineapple chunks with a fork, and combine all ingredients except coconut.
  • Spoon about batter onto a hot greased pan.
  • Top with some shredded coconut and spread about 1 tbsp batter over coconut.
  • Flip and brown second side. Repeat for rest of batter.

    This was great! I doubled the recipe and left out the sugar. There is a missed measurement in the directions of how much batter to use, I used a 1/4 cup measure to scoop the pancake batter. I doubled the recipe but had to thin out the pancake batter a little--I got 10 pancakes total with a double batch.
    I served it with maple syrup and toasted coconut. Next time I would make sure I had extra pineapple on the side. The bites of pancakes with small bits of pineapple were great but the bites without tasted like plain pancakes. Next time I would also like to add some vanilla and perhaps a spice or two like nutmeg, cinnamon or clove etc..
