Pistachio Buttons

    Pistachio Buttons by Pleclare

    Wonderful little cookie, delicious and addictive! I love the almond and pistachio flavour, and the flavor gets more pronounced the longer it sits. The Chocolate comes through too and all it works together so well!
    The rolling process was a little difficult at first, and a little time consuming but it got easier! As I started making it I thought...hmmm, might not make this again! But it got easier as I went and it's totally delicious---so worth it!
    The first log roll (each dough is divided in 4, 4 pistachio logs and 4 chocolate wraps) was a learning curve, so after that one I realized you need to roll the chocolate dough between 2 pieces of parchment or wax paper--much easier! I rolled the chocolate a little bigger than I needed and cut straight edges off so there wasn't overlap. So by the 3rd and 4th logs I had it down.
    It took longer than an hour to chill in the fridge, so I put it in the freezer for 20 minutes, working with one dough log at a time. The first two were not quite chilled enough and crumbled quite badly---it took some pressing and I had to fix each individual cookie after cutting to put it back together--they were also the first two logs I rolled and I think the chocolate dough wasn't adhered that well to the pistachio dough. So pressing the dough while gently rolling it between the parchment or in the plastic wrap before chilling helps with that. I had no problems with crumbling with the last two logs, so I learned as I went... Phew!
    Another tip, save some paper towel rolls and place the dough logs on them and tape them closed to keep the round shape while chilling.
    I think this cookie would be great for Christmas! I'm not sure it looks very St.Paddy's Day like? If I did it again for St.Patricks Day I would keep all the dough green and roll the logs in crushed pistachios, green decorator sugar or edible gold dust. That would also be easier and faster to make. ;)
    But I still think it was worth the extra effort as it's totally delicious! And bonus, you can keep the other logs in the freezer and cut them when you have a craving or when company comes! :D

    Geez, I wrote a long winded review! I should know better than to write when I am tired, lol...hopefully it makes sense.
    The end result, it started off hard but got easier as I went---making them again would be a breeze as I know what to do now. ;)

    I just thought of this, how cute would they be with two little holes in the center for the "buttons"--they could be Leprechaun buttons! ;)
