Polenta Italina For Cornmeal Recipe

    I made this per the recipe and found it tasty but it a bit bland for me.
    So I made it again with a few tweaks.

    I did not use quick cooking cornmeal, used regular cause that’s what I have.
    I used my own pasta sauce, always have some on hand.
    For the margarine I used Natrel lactose free butter, and for the cheese
    i used Gouda lactose free cheese.
    I also added onion,garlic, some minced rosemary and basil, green pepper and chicken.
    I had a small chicken breast so I cut in in chunks, when almost cooked I added the onion, garlic, and pepper and sautéed till chicken was cooked.Then added the rosemary and
    basil and my tomatoe sauce.
    The submitter said chicken might be added so I did.
    I scooped out some polenta just after it was cooked and topped it with the chicken mixture.
    The end result was really good, makes a nice light lunch and a switch from my usual salads.
