I remember growing up post-war baby ( world war 2 ) My family could not have much in the way of meat at the table, it was hard for most. So this cornmeal was made and maybe some chicken was added.

Ingredients
  • 4 cups water
  • 1 cup quick-cooking polenta ( cornmeal )
  • 2 Tbs margarine
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp salt
  • Pasta sauce fresh or from a 8oz jar, about 1 cup heated

Directions
  1. Bring the water to a boil.
  2. Slowly whisk in the polenta.
  3. Add the salt and cook, stirring frequently for 5 minutes.
  4. Add cooked or heated pasta sauce, (do not put too much it will be soupy).
  5. Stir in the Parmesan cheese and margarine. Mix well.
  6. Can be served with Sauge, chicken or any other meat
  7. Serve immediately.
