    I made this "Polenta" and it did not work for me as expected according to the instructions. Within 1 minute (not 15 minutes) of adding the cornmeal to the boiling water the mixture was pulling away from the sides of the pot and totally lumpy (despite the fact I sprinkled the cornmeal and stirred). To remedy this problem, I added more water (not sure how much - about 2 cups - I was wrongly assuming the recipe ratios were off) and blended it smooth with my stick blender. I continued cooking but after 30 minutes I never again got to that state where the polenta was pulling away from the sides of the pot; however, the cornmeal was caramelizing on the bottom of the pot (on the way to burning) and becoming quite "glutinous" so I stopped cooking. What I ended up with in the end tastes excellent: smooth and creamy unlike the more gritty (more authentic?) polenta from the Italian delicatessen. I made mine with water (not broth). I would definitely make this again. I noticed the recipe for Polenta on Allrecipes is essentially the same as this one, and it has about 75 5-star reviews. Some reviewers suggest adding the cornmeal to cold water before adding it to the boiling water to prevent lumping. Thank you Eastcoaster for sharing your recipe!

    BIG SMILE! You know Eastcoaster, my husband doesn't like corn. I told him tonight's supper was a recipe passed on from your grandmother so he ate the polenta as a "toast to your grandmother." I didn't tell him it was actually the Italian Roast Beef recipe that was passed down from your grandmother! ;) I bet it is the first time your grandmother has ever been "toasted" with polenta! ;)

    I have never made polenta before, but I do love it :) I've made grits though, so doesn't that count? Lol. What is the sauce over the polenta Mrs.J.? Looks SOOO good!

    Mommyluvs2 cook - The sauce is the pasta sauce from the Roast Beef Cooked in Pasta Sauce (the other recipe I posted). I altered the recipe so it may not look the same as usual. It was really tasty though!
