    Recipe: Pork Chops Parmigiana

    I wanted to make this for the “7 Ingredients or Less” challenge, but darn that 8th ingredient. lol! This was excellent! I made my own spaghetti sauce using Roma tomatoes from the garden. I did not bake these as instructed. Didn't feel like dirtying a baking pan. I returned the pork chops back to the skillet, sprinkled with Parmesan, spooned the spaghetti sauce over the top, and topped with mozzarella cheese. Then I covered the skillet with a lid and cooked on low for approximately 20 minutes. Used bone-in chops because that’s all I had.

    I remember years ago, and I do mean many years ago, my then boyfriend's mom using boneless pork medallions pounded thin to make parmesan instead of using veal which was expensive. I don't eat veal now for other reasons but know that using pork is ideal and works well.

    Thank you, LindaLMT! Pork seems to be the substitute veal. I use ground pork when a recipe calls for ground veal.

    My review: Who would think Pork Parmesan would be a thing but it is and it's great!! Kinda like veal but much better. I lightly pounded and breaded my pork chops and pan fried till they were done. Placed them on a cookie sheet (I used my large toaster oven), topped with the cheeses and into the oven they went long enough to melt the cheese, I then plated them and spooned hot sauce over top. Couldn't have been easier and was delicious. I had bought eggplant rollatini from the Italian Market and there was enough sauce to make this recipe. I opted not to use the mushrooms or onion. Delicious!!!
