Portobello Spinach Pizzas

    *Made for the September 2017 Fruit and Vegetable Challenge*

    This was the perfect lunch and a great way to start using up some portobello mushrooms that were given to me! I used fresh spinach, and after sauteing, I squeezed out the excess water through a kitchen towel since the tomatoes and mushrooms would be giving off water as well as they cooked. I did not mix together the sauce and seasoning, I just simply spread the marinara then sprinkled on the Italian seasoning. Topped with fresh smoked buffalo mozzarella cheese :) So yummy!!
