Potato Leek Soup

    Potato Leek Soup by PongoUSA

    DELICIOUS!! I rarely have cream in the house, but had some leftover from Thanksgiving dessert. I searched for German recipes using cream and found this. I LOVE potato and leek soups, and thought this was a neat recipe with the Frankfurter in it!
    I did add some carrot and celery to the soup (which I believe is traditional), and used 4 cups chicken broth and 2 cups of water for the 6 cups of liquid--so that probably helped boost the flavor.
    I didn't have fish sauce so I used soya sauce instead (The fish sauce being a sub for Maggi seasoning). I'm familiar with the Maggi seasoning, my German in-laws put it in everything. My FIL would have it at the table next to his plate-- he loved it! So naturally I bought it to make German food for my husband until one day I read the bottle and saw "MSG"--so I stopped buying it. The German red cap Maggi still has MSG in Canada, perhaps the Maggi seasoning in the USA doesn't include it though?
    I used German Pork Frankfurters that I sliced for the soup since it didn't fit whole in my soup bowls. I can't remember the last time I ever ate a frankfurter, hot dog etc., my husband can't recall me eating one at all, Lol! However it is so good in this, just a subtle flavor that doesn't compete with the flavour of the soup.

    Shona I love your review and your photo! I had bookmarked this soup already but totally forgot about it. I have a bottle of Maggi seasoning in my pantry with a red cap on it. Didn`t even realize it would have MSG in it! And yep, sure enough, there it is listed in the ingredients. Gonna try shortlist this. Thanks!

    Very nice photo, Cosmicmother! I LOVE potato leek soup! Well, basically anything that uses leeks. Leeks have such a deep, rich flavor. I tried Maggi seasoning once. I found that it is pretty close to soy sauce. Rather than have two similar products taking up space on the shelf, I just use soy sauce. I hate MSG and avoid products that use it. Having said that, if you ever wonder why Chinese recipes made at home never taste as good as it does in the restaurant. The key word is "MSG." One time I ordered my favorite dish and requested no MSG. I tasted awful! lol!

    Sorry Janet! I was bummed when I first read that Maggi seasoning had MSG in it! The red cap might have slightly less MSG than the Chinese yellow cap bottle though. I'm sure a few drops here and there is just fine! It gives me really bad headaches so I have to avoid it, but those without allergies can have small amounts once in awhile and be fine I'm sure! :)

    I feel the same about Leeks Diz! It gives recipes such a depth of flavor that you can't get from regular onions, I love them!

    I think anything with a rich umami flavor would work as sub for Maggi, fish sauce etc...even a browning sauce like Kitchen Bouquet, anchovies or even Worcestershire sauce would work! But really, for this soup recipe I don't think it needs any of that. Especially if you use a meat or veggie broth. :)

    I bought leeks at the Farmer`s Market this morning Shona, and I found `European Weiners` at the grocery store. Who knew? Cost me a fortune but it`ll be fun to try them and see how different they are from `hotdogs`. Can`t wait to make this up!

    I was a bit worried about the serving size. It says it serves 12. At first I wondered if it was a typo like Pat makes, where it should actually say 1-2. I`d say the serving size would be four.

    I was also thrown off by the potato measurement. It calls for 800g of potatoes. I thankfully had a digital food scale in my cupboard drawer. It turned out to equal about 8 medium potatoes. A great way of measuring really although I don`t see it often.

    I copied Shona and used chicken broth (home made) instead of water, so I didn`t add salt. I used fresh parsley from my herb garden.

    I subbed evaporated milk for the heavy cream, Maggi sauce for fish sauce and I didn`t use Nutmeg. (Except in baking I`m not really a fan)

    I know Ralph (PongoUSA) is a sausage connoisseur, and so I actually found European weiners in my grocery store to use for the frankfurter. They cost me $7.99 for 6 of them but I REALLY liked them and they were excellent in the soup. (Better than hotdogs IMHO)

    The soup is velvety and comforting. Awesome for an autumn lunch. Great recipe Ralph and thank you Shona for reminding me that I`d bookmarked it eons ago. :)

    Awesome, I'm so glad you liked it too! :) My husband loves European wieners, and that's all they had growing up. Wow on how pricey they were! But worth it if you only indulge on them once in awhile. I love your photo too, you can see the wieners much better in your picture! (Lol, my last sentence sounds funny ;)

    I'm just seeing your review Janet, I missed it!! Lol, I have a food scale that measures grams so I use it when needed :) I've never seen "upscale" hot dogs! Didn't even know they existed! I wonder if it's even something we get here in the states, or if I just overlook them? Glad you liked it!!!

    I`m positive you`d be able to find `European wieners` or actual Frankfurters in the States Michelle. Ralph, who posted the recipe, is of German descent and he gets all manner of German sausages and such where he lives in California. Obviously a German deli would be the ideal place to go look, but if I found them in my local grocery store, I`m pretty confident you`d be able to get them where you are as well.

    Mommyluvs2cook--I've always found European weiners in the Deli section of the grocery store. Can't say I've ever seen them at Wal-Mart. Other large supermarkets usually carry them.
