made 09/10/2016 for the Recipe Challenge--Pumpkin theme! :)

I had exactly enough pumpkin puree leftover from making the pumpkin cookies to make these!
The kids loved them, I made half with chocolate chips but they liked them plain too. The spices were subtle, so I might up the spices next time. Maybe a pumpkin spice blend would be nice? I followed the recipe exactly, letting it rest etc...I got 8 large pancakes from the batter.
Dh didn't care for them, but he rarely eats pancakes anyways. The texture is a little more moist than the average fluffy pancake so that could be why. He might prefer them cold as warm pumpkin baked goods have a stronger "pumpkin--earthy" smell.
I will make them again :)

I could imagine this as a dessert served warm with maple walnut ice cream! Or ooey gooey buttered rum sauce with walnuts! Lol, can you tell I'm hungry :)
