Pumpkin Pancakes Recipe
I found this recipe in my Grandmothers recipe box. My children LOVE pancakes so I try to find healthy ways of making them. The pumpkin makes them very moist and tasty.

Ingredients
  • Dry:
  • 1 1/4 cups all purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 1/4 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/8 teaspoon grated nutmeg
  • Wet:
  • 1 cup milk
  • 1/3 cup pumpkin puree
  • 3 tablespoons melted butter
  • 1 large egg

Directions
  1. Combine all the dry ingredients in a medium bowl and mix well with a whisk
  2. In another medium bowl add all the wet ingredients and mix well
  3. Whisk the wet ingredients into the dry ingredients just until combined
  4. Don't overmix
  5. Let stand for three minutes
  6. Using a 1/3 cup measure pour batter onto a hot griddle or pan.
  7. Flip when bubbles start to appear approx. 2-3 minutes
  8. Cook 1-2 minutes longer
  9. These pancakes sometimes need a little extra griddle time due to the pumpkin puree. I just keep my eye on them flipping as needed.
  10. Serve with maple syrup and sliced fresh fruit
