How to make it

  • Combine all the dry ingredients in a medium bowl and mix well with a whisk
  • In another medium bowl add all the wet ingredients and mix well
  • Whisk the wet ingredients into the dry ingredients just until combined
  • Don't overmix
  • Let stand for three minutes
  • Using a 1/3 cup measure pour batter onto a hot griddle or pan.
  • Flip when bubbles start to appear approx. 2-3 minutes
  • Cook 1-2 minutes longer
  • These pancakes sometimes need a little extra griddle time due to the pumpkin puree. I just keep my eye on them flipping as needed.
  • Serve with maple syrup and sliced fresh fruit

    These are great :) The kids loved them! I sprinkled a few choc. chips on half the batch for them, but they liked them plain too! I couldn't detect too much spice, so I might add a little extra for me next time. :)
