Pumpkin Yeast Bread

    Pumpkin Yeast Bread
    Made for IMI2's October 2018 "Pumpkin, Halloween, Octoberfest" challenge. Recipe made for the pumpkin part.

    My review: "Fabulous recipe!! Very much like an ever so slightly sweet, richer, white bread. The color is gorgeous from the pumpkin but isn't heavy in pumpkin flavor like quick breads are. I don't know if I can taste the spices, maybe I do, but because I didn't bake one without I have nothing to compare it to. Regardless I wouldn't adjust them because I think the bread is perfect as is.
    I want to note that a packet of yeast is only 2 1/4 teaspoons not a Tablespoon so I adjusted the recipe to use that of the packets and I also used Bread Flour.
    Would be ideal sliced thick for French toast or warm with butter along side a stew or soup. Heck it would even be wonderful used for a turkey sandwich. Thanks Peetabear for sharing!!"

    For some reason my photo files are large and I can only upload one photo at a time. If you go to the recipe I was able to load another showing the bread sliced.

The new cameras create huge photo files compared to the old ones. You should be able to adjust the file size on your camera. Even the smallest setting can be large by comparison. If you have a photo program on you computer, you should be able to edit the photo and resize it. I always resize mine to under 1MB. Hope that helps.

    I find with pumpkin quick breads that the pumpkin and spice flavors are more pronounced the 2nd or 3rd day after baking. I wonder if it's the same with pumpkin yeast breads?

I would be happy too that the pumpkin isn't a strong flavor, so that it can be more of a versatile bread :) I have to size down every picture I upload off my Cannon for this website (and most). You have to go through a photo editor to do it. Your camera is taking beautiful pictures though!!

    I changed the file size on my camera to small DIZ so we will see. Does changing the file size effect the quality of the picture? I'll have to read up on file sizing.
    I tasted a piece this morning and it still tastes the same Shona. At least I think it does.
    I made half the recipe Janet because I wanted only 1 loaf of bread but you are correct, if you want to make the full recipe use 2 pkgs. yeast. Maybe the author used more because she was using regular flour but still stating a package of yeast = 1 tablespoon of flour is not correct.
    My photo editor program is a very basic one that came with the computer Michelle. What software/program are you using for photos? Even downsizing on it hasn't worked. I must be doing something wrong.

My camera is set on the smallest file size. The average size photo is a 2MB file. Even that is too large and it takes forever to upload. I use photo editor on my computer and resize it to about 750KB. It pops up a thing that says my pixels are 3000 x 2800. I'll adjust the first number down to 2,600 (it should automatically adjust the second number to the appropriate size). Click "ok" and then "save." It takes some guesswork. They can be resized up and down. If you aren't sure about yourself, click "save as" and rename the photo. That way you will still have the original and an edited photo. The only thing it might affect is how your photo fits in the frame on the page you are uploading it to.
