Quick And Easy Enchilada Sauce

  We recently got some homemade tamales that my friend's Mom made and I needed something to go on them. I was out of salsa and sour cream, BUT I did have everything to make this, and it sure did come together quick! I thought 1 1/2 cups of water seemed like a lot, so I only used 1 cup, which worked out great, but I do think a little more would be okay too. Flavors are spot on and it was delicious, the perfect tamale topper :)

  Thank you everyone! We are actually doing a tamale fundraiser for my daughters softball team right now, so I've been over her house helping out with making the tamales quite a few times. I think I know enough now to manage them on my own one day! Will probably be a while though since we have a freezer full :) :)
