How to make it

  • Heat oil in a skillet over medium high heat.
  • Saute onion until translucent.
  • Stir in flour and chili powder, reduce heat to medium and cook until lightly brown.
  • Stir constantly to prevent burning flour.
  • Gradually stir in tomato sauce, water, cumin, garlic powder and onion salt into the flour and chili powder until smooth.
  • Continue cooking over medium heat for approx. 10 minutes or until slightly thickened.
  • Season to taste with salt and pepper.

    This looks great - I've been searching for a good enchilada sauce forever! Making it myself will add another step, but at least it'll taste good. 1 question: What is NM or CA chili powder? Will it still be good if I just use McCormicks?
