Quick Pickled Onions

    I was not expecting the amount of flavor out of these that I got with such a short time pickling! I made them up about 2 hours before using them and they were perfectly pickled and SO delicious!! Used coconut sugar with no problem. Served them on BBQ chicken lettuce wraps and sandwiches :)

    Oh yum! Beautiful photos, as always, Mommyluvs. I like that the recipe says you can also use shallots. Garlic sounds like a good add-in, too.

    Thanks! I meant to use some of the add-ins but actually forgot lol, but it was really perfect as is. I do agree though about the garlic being a good addition :)

    I've never tried putting them in a jar and saving them! I like to soak them in lime juice for an hour and serve with tacos.
    Please let us know how long they last in the fridge for you. :)
