Quinoa Edamame Salad

    Made this yummy and flavourful salad the night before last for this month's 'Cold Foods' challenge. It's a great summer staple. I rated it in the IMI Group six years ago but thought I should bring it to everyone's attention again here in IMI11. :)

    Quinoa Edamame Salad

    The salad recipe makes a lot! I reduced the amount of Quinoa to 1/2 cup for the two of us (it fluffs up a lot!). We ate it for dinner one night and there's enough leftover for two more meals. I eyeballed the rest of the ingredients and I didn't have any cilantro on hand but as I mentioned in my last review, this is a very forgiving recipe and you can basically play with it and add or subtract whatever you do or do not care for.

    This salad would work well for taking with you for lunch packed in a mason jar. The dressing is really nice with the garlic, lemon juice, thyme and olive oil. I did make up the amount of dressing called for even though I reduced the amount of quinoa.

    It's colourful, it's healthy and it is a great thing to have on hand in the Dog Day's of summer! Thanks Marie! This is a summer stand by for us.
