Ingredients

How to make it

  • In a bowl, combine the Edamame, corn, Quinoa, green onions, red bell pepper, Feta, Jalapeno & cilantro.
  • In another smaller bowl, whisk together the olive oil & lemon juice. Add the minced garlic, thyme, salt & pepper to taste. Mix well and pour over salad, toss to coat. Refrigerate for an hour or so, then enjoy!
  • 3/13/2014 ~ I forgot to add Feta when I posted this recipe..added it today:-)

    Guess I should have cleaned the lip of my bowl before taking a picture! OOPS! But I'll just say I was too anxious to want to dig in! :) Made this recipe last night and both Jim and I LOVED it with a capital L. So much going on and the flavours are really awesome and fresh. More in IMI.
