Quinoa Edemame Salad

    I halved this recipe since I was eating it myself for lunches. I REALLY wish I would have made the whole recipe as I got 2 lunches out of it (and a late night snack:) and could have eaten on it for a week! The second day it was even more flavorful. The only change I made was to use yellow bell pepper instead of red. Used fresh thyme. Thanks Marie, this is delicious!

    Nahh..I'm to lazy to start another one lol! The "e" felt so right as I was typing, but looking at it, it's so wrong! Oh well! I love quinoa and am slowly trying to get my family to like it. I didn't make them try this though because they all swear they hate edamame...whatever!! More for me :)

I had edamame a couple of years ago but it must not have been memorable as I don't remember anything about it! Its a very pretty picture, ml2c!

    Michelle....that's a great picture! I am SO trying this recipe. I know i'm going to love it. I'm surprised you Joce and Frankieanne haven't tried quinoa. It's very likeable. Kind of like couscous.....there's not a lot to not like. Edamame sort of remind me of fresh peas.

    Janet, I have tried couscous and I wasn't crazy about it. There is something about the texture I am not fond of. That is why I am leery about trying quinoa. Like Frankie, edamame are just O.K. not that memorable and I can live without fresh peas. I can take them or leave them. We all have different tastes. LOL I love broccoli, cauliflower and zucchini:)

    The texture of quinoa is firmer than couscous Joce, and I would say a lot different texture. I don't think Janet was comparing it to couscous...just saying they both are what they are! Hehe, my taste is pretty much for anything, except raisins and stinky cheese :)

    Made this for dinner last night to accompany a rotisserie chicken done on the BBQ. It was A-One FANTASTIC! Both hubby and I LOVED it and I am totally adding this to our summer salad rotation. It has a lot of flavours and textures going on which is really nice and it tastes so fresh and yummy! I didn't have quite enough Edamame and I probably added a bit too much Quinoa but recipe is very forgiving and you could just play with what you have. The BEST thing about this recipe in my humble opinion is the lovely dressing. That garlic/lemon combo has to be the star I think!
