Raspberry nut muffins

    Raspberry Nut Muffins
    Made these this weekend. Mine were very flat for some reson. And not typical of muffins but tasty.... they got crisp around edges. Wonder if they didn't rise because I didn't use muffin liners? I followed directions alternating dry and liquid ingredients but maybe they got overmixed with this method. They were tasty but did not taste that good second day. Became very dense.

    I never use muffin liners and that shouldn't have stopped them from rising. Perhaps the yogurt you used was a little more liquidity so the batter was too dense? Too bad it didn't hold up the next day :(

    The recipe sounds good, so I don't know what could have caused them to come out so flat. That's so disappointing when a recipe doesn't work and you had your mouth all set for it :p

    Yes mommy. They got extremely dense second day. I wonder if it was the raspberries were too liquidy. I might try again but probably not. Hate wasting ingredients. I know it's very odd. Recipe appeared spot on. Idk. Weird fluke maybe I forgot something and didn't realize. Who knows.
