    ***OCTOBER PUMPKIN CHALLENGE***

    For anyone who loves Indian food and is looking for a good vegetarian dish, I would definitely recommend this. For us, it wasn’t our cup of tea and I knew that when I made it. I am really trying to expand our tastes and wanted a pasta dish that was something different. This particular spice combination is one we struggle with, but I thought the pumpkin and coconut milk would mellow it out. Certainly, it had a positive effect on the overall flavor. We didn’t have any difficulty eating it, just isn’t something we would chose to eat again. This made a ton of thick sauce that had a peanut butter like consistency. In the photo, I only used half of the sauce, but mixed in the rest before serving. After doing so, I really wished I would have thinned it with vegetable broth. I accidentally grabbed fettuccine by mistake so I had to go with that instead of linguine.

    Trying new spice combos can be tricky! Good for you for trying though :) This is like Indian food meets the Caribbean, which I guess is what West Indian food is? If you take out the ginger, coriander and cumin you almost have a jerk spice, and of course ginger, coriander and cumin is in most Indian dishes---I like them both but have never had it all together.

    Wow, this recipe has a ton of stuff in it, everything but the kitchen sink! No really though, it looks great, and good for you for trying new flavors :) Lot's of flavors going on, and I could see how it can be a turn off somewhat, I think I would like it, but not my kiddos or hubs.

    Thank you, everyone! Cosmicmother, it never occurred to me that it was a type of jerk seasoning. Caribbean food is another one that we avoid. I have purchased a bottle of jerk seasoning before and thought it was o.k. The taste and smell of this just reminded me of Indian food.

    Bakerme, it wasn't hot at all. It probably could be depending on the type of chile pepper you used. Mine came from the garden and was starting to look a little rough.
