    This is absolutely delicious! Perfect comfort food! I made this for dinner, so I made 4 portions for the family and served it with a salad. I doubled the horseradish mayo for DH and I and we devoured the whole thing, lol. The sauce is a must!!
    I have some provolone cheese, so I used that instead of cheddar. It reminded me of a Philly Cheesesteak with those flavors. I used deli roast beef this time, but next time I'll save some leftovers from a roast just so I can make this again! I used a trio of peppers, red, orange and yellow. Oh, and DH said this was the best quesadilla he's had in a long time!

    I had trouble getting a good picture last night, this is the best I could do. It doesn't do it justice, but it's proof that I made it, lol ;)

    We love horseradish with beef, too, Manella. Ingelhoffer's creamy horseradish is our favorite. We buy the regular, not the hot, and just a tiny bit really clears the sinuses, so I can't imagine how hot the hot is!

    Thanks Bren, when I made this I almost made a mustard-mayo sauce for the kids as they don't like horseradish either. I bet you could sub a nice grainy mustard for the horseradish? The kids decided to have it with ketchup, cause they're strange..lol ;)

    Lol, thanks Janet! All of my photos came out really shaky or dark. I must have been shaking from excitement to eat it! The perfectionist in me wants a tri-pod, lol ;)

    This is the first time I've made or eaten a quesadilla! This tasted like a Philly steak sandwich and we loved it - yum! I used Flatout multigrain wraps, which are about as big as a large torilla, but better for my diet ;) Thanks for the tip about using Provolone instead of cheddar, Cosmicmom.
