Roast Beef Quesadillas With Horseradish Mayo

- For The Quesadillas: shopping list
- 1 large tortilla, or if they are the taco size use 2 shopping list
- 1/2 bell pepper (I used yellow) thinly sliced shopping list
- 2 mushrooms sliced (can omit if your a mushroom hater :) shopping list
- 1 shallot, thinly sliced, use onion if that's what you have shopping list
- 1 clove of garlic, chopped shopping list
- 2-3 thin slices of roast beef, chopped shopping list
- 1/4 cup shredded cheddar, more if you'd like :) shopping list
- Salt and Pepper to taste shopping list
- For the Horseradish Mayo: shopping list
- 2 Tbs. mayo shopping list
- 2 Tsp. prepared horseradish shopping list
- Squirt of lemon juice shopping list
- Dash of Worcestershire shopping list
How to make it
- Quesadillas:
- Start by sauteing your peppers in olive oil for about 5 minutes (onions too if you are using) then throw in the shallots, mushrooms and garlic. Cook until the mushrooms are soft. Throw in the beef and cook about 30 more seconds and season the whole thing with S&P. Fill half of your tortilla (or tortillas if using taco size), sprinkle cheese on top and fold over. Add back to the same pan you used for the filling adding a little oil if you'd like. Cook until browned, flip and cook the other side until browned. Cut in half and serve with horseradish mayo :)
- Horseradish Mayo:
- Prepare this while your quesadilla's cook, just mix it all together! This makes a little more than I needed so plan on spreading some on a sandwich :)

This is delicious! Especially with the horseradish mayo! DH said it was the best quesadilla he's had in a long time, and I have to agree. I didn't add the mushrooms, but I used 3 peppers-orange, yellow and red. And used a yellow onion. I'll definitel...more
