    Roasted Cauliflower
    Recipe made for IMI2 group's May 2020 'picture-less' recipe challenge.

    My review: Perfect! I like to roast cauliflower and use it a variety of ways. I add it to salads, use it to make cream of soup, season with varying seasonings and eat as is either hot or cold, and eat chilled with hummus. Such a wonderful under-appreciated vegetable. This recipe is ideal because it is only seasoned with salt and pepper so I can use the roasted florets for anything.

    Cauliflower is definitely an underappreciated vegetable, but I eat it a lot! My Mom made it a lot while I was growing up so I guess it stuck with me :) Saving this, such a nice simple recipe!
