Roasted Pepper Salad
Made for IMI2's August 2018 "Grill" challenge.

The grill was on and what better time than to roast a red pepper and make salad. A simple, classic, and delicious recipe!! I scaled the recipe back and only used 1 large red bell pepper which was enough for me.

Roasting peppers … another magical thing that makes an otherwise ordinary vegetable spectacular Michelle. I love getting a crusty baguette and making a sandwich of roasted marinated peppers. That's it.

I tried to load two pictures (one of the grilled pepper and the other of the actual salad) but it was erroring out and would only let me load up one. :(
