Roasted Red Pepper Hummus

    Roasted Red Pepper Hummus by Elle

    Excellent recipe!! I really loved this. Better than any red pepper hummus I've bought, and I think I like it better than my regular homemade hummus recipe!
    The one thing I didn't have was lemons, they had gone bad before I got around to making this. But I had some limes, so I used the juice from that instead . Elle mentions to add a splash of lime juice at the end, so I hoped it wouldn't be a big change in flavour to swap the lemon juice for lime juice..
    I had a large jar of roasted red peppers,18oz. This recipe calls for a 6oz jar, and doesn't specify to drain the liquid. So what I did was add two whole red peppers from the jar (which was a 1/3 of the jar or 6oz to my guesstimation) and started to blitz all the ingredients in a food processor. It was a little thick, so I added some of the jarred pepper liquid until it ran smoothly.
    I served it with homemade pita chips and it was delish! A new favourite recipe for sure! :D

    but will definitely give this a go. Saved. I like that the lime worked out cause I have a lime and no lemon. Great find.

    I don't think I've bought hummus from Sobey's, but I use to buy the Sabra brand of red pepper hummus. But it started to have a harsh citric-acid taste that would burn the roof of my mouth. :s
    This has a light citrus taste with the lime. Oh, and I almost forgot to mention I didn't measure the cayenne pepper, I only added a pinch or two until It was lightly spicy. Best to add that to taste rather than start with a whole 1/2 tsp. :)

    This looks fabulous and I'm totally going to try. I'm guessing that it's the same or maybe even a tad more expensive than buying the pre-made stuff but I do bet it tastes WAY better! Nice job Shona!

This recipe doesn't call for any oil like most hummus recipes do and the brand I buy. After looking at other recipes I concluded adding 2 Tablespoons of olive oil would improve the recipe for my taste as well as emulsify the consistency. I added the peppers wet and next time will pat them dry which too will improve the consistency for my taste.
