    ****October 2019 Recipe Challenge--Orange Food***

    This is really different for a rutabaga dish. Hubby and I each had a different opinion over the spices. I only used half of the recommended ginger because we are not big on ginger. Hubby thought it was good. I thought it was okay, but not totally sold on it. Baking the vegetables for 2 ½ hours seemed like an exceptionally long time and I don’t think it’s necessary to bake that long. I removed it after 2 hrs. Despite being covered, the liquid had evaporated and the vegetables were starting to burn.

It looks really good. Only a tbsp. of brown sugar too so it woudn't be too sweet which is nice. Indeed 2 1/2 hours sounds like an awfully long bake time. Do you think maybe 1 1/2 hours would have been a better amount of time?

    Thank you, Chuckieb! I think 1 1/2 hrs would be fine because it says to cut the vegetables in small pieces. Rutabagas are hard like sweet potatoes. They taste more like a turnip. If you have never had rutabaga before, I'm not sure you would like this. The spices made for an odd pairing. My first experience with rutabaga was in beef vegetable stew. It just blends right in with stew.

    Thank you, Mommyluvs2cook! Maybe it was the ginger that I didn't like. Yes, I like trying different recipes, especially for foods like this. Not the same old, same old.

    The picture is gorgeous DIZ! I've never had a Rutabaga or at least don't think so. I too agree that 2.5 hours to roast vegetables is exceptionally long. Looks like a fun festive dish though and something different for the holidays.

    Thank you, LindaLMT! Rutabagas sort of taste like a turnip. They look just like a turnip, are white inside, but when cooked turn orange in color.
