Salmon with Tomato Orange Basil Sauce

    I only made the salmon part of the recipe. Loved the idea of using fresh ingredients that I just happened to have on hand. I skipped over the entire process of preparing the tomato and just chopped up whole tomatoes, skins and all. After adding all of the ingredients, the sauce was bland and didn’t have any orange flavor. I added more orange juice, more garlic and even some salt. I liked the orange-basil combo, but hubby not so much......liked the orange, hated the basil. The one thing we both agreed on is that it really didn’t pair well with the strong flavor of salmon.

    Oh my gosh, that's a stunning photo, DIZ! All of the salmon I've ever had has been terribly dry, but that looks so moist. Sorry the recipe didn't taste as good as it looks :p

    I have had orange with salmon, but never basil. Sorry the 2 flavors didn't work well together with the salmon :( Your picture is pretty perfect though DIZ!!

    Thank you, ladies! Bakerme, too bad about having dry salmon. That's pretty hard to do because most salmon is really oily. I actually like a drier salmon so I buy sockeye. It's still moist, but the pieces flake off and hold together. Works much better if you are using in salads or pasta dishes.

    DIZ, I've never cooked salmon, and have only had it out, but it's been dry every time :p My husband has a severe allergy to any kind of fish, so I never have it at home and only enjoy it when we eat out.
