    San Francisco Pork Chops by Rosej

    This was simple and easy, perfect for a weeknight meal. It requires no marinade time and barely any prep time. And it's all done in a skillet.
    I think the sauce could use some more flavor though, I would certainly add some garlic and ginger next time. It was sweet and spicy as per it's description, but I think it needs more depth of flavor. I did sub orange juice for the sherry, and I've done that in plenty of similar pork dishes. It gave a nice tang and subtle flavor to the dish. I've also seen San Francisco pork chops with beef broth instead of the sherry called for, making it more of a brown sauce. Which I might try as well with just added garlic.
    I served this over rice, and my pork was done in 20 minutes instead of 30 min. (I used about 1/2" thick, boneless chops). I added some garlic powder and black pepper to the chops before browning in the garlic infused oil, but it still wasn't enough flavor for me.
    Everyone still ate it, and it was good-- just not "wow" good.
    I think I would like to try it again with ginger and garlic and report back at some time! Perhaps even use sesame oil in the sauce instead of regular as well. Lot's of possibilities! :)

    Great photo, Cosmicmother! I agree with your review. I've made this before using beef broth. Maybe the same similar recipe you saw? We didn't like it at all. My complaint was that it was too salty, no flavor, and pork chops were way overcooked.

    Yeah, I thought the 30 minutes was too long Diz..I imagined overcooked dry chops so thankfully I checked them at 20 minutes. I think this recipe, or one similar, is on AR. I never thought about the salt, perhaps the orange juice is the way to go instead of the broth. Unless I used salt free broth? I did use low-salt soy sauce.
    Linda, perhaps putting the meat in the sauce for a couple of hours would help, good idea. But I believe it would still need a flavor boost with some aromatics, like garlic, onion or ginger. :)
