Sausage and leek casserole with buttery chive mash

    Sausage And Leek Casserole With Buttery Chive Mash by Annielikestocook

    Outstanding recipe, the whole family absolutely loved it!! It's like an upscale "Bangers and Mash" recipe.
    I was looking forward to this all week and thankfully it did not disappoint in flavour!
    After reading the recipe over and over I found the technique of browning the sausages in the oven--in a casserole dish--rather odd. I didn't want to be bending in and out of the oven making this; so I decided to cook it on the stove top since I have a large sauté pan with a lid.
    I measured the grams with my scale (potatoes, leeks, etc.) and I found the milk was a little too much for the 800grams of potatoes. But I went ahead and added it all--yikes--tried to cook it down a bit more in the pan but it stayed rather loose. Not runny, just looser than I like it so I'll make sure to eyeball the milk next time. But it was still delicious!
    And I think the liquids in the tomato sauce could be cut down too. I used chicken broth for the 200ml of wine but I think I'll leave that out next time. (And there is no mention of reducing the wine either) However the tomato sauce was sooooo good I could eat that like soup and be very happy!
    The smell coming from my kitchen was wonderful! The leeks, garlic, onion, celery etc complimented the sausages perfectly. Since this recipe is from Ireland, I looked up the pork sausages they use--it's just like the British bangers. And luckily I was able to find a British style banger/sausage at my store. If you can't find them I think bratwurst would be the next best thing, you'll want a mild-garlic flavored sausage. Pork breakfast might be ok, if it's not sweet, just double the amount if they're the small ones.
    The recipe calls for sage leaves, picked (it reads pickled but another site has this exact recipe and it's picked, lol ;) I could not find fresh sage so I used poultry seasoning rather than buying dried sage. On another recipe site they list "mixed dried herbs", which in the UK is usually--Basil, Marjoram, Oregano, Rosemary, Sage and Thyme. I'm sure an Italian herb blend would be great too!
    If you like sausages put this on your must try list! A delicious, comforting meal! :)

    I had a little leftover leek and tomato sauce so I had it for breakfast, served it warm over toast and eggs--yum!
