Sausage Rigatoni in a tomato cream sauce

    Sausage Rigatoni In A Tomato Cream Sauce by Katerina

    This was great and different from my usual sausage-pasta dish. As-is, I think the only thing it could use would be some fresh basil. Since I didn't have any, I followed some of the idea's DetroitTokyo used and added some chili flakes, black pepper, dried basil and oregano.
    Rather than brown the sausage in a separate skillet (I hate extra dishes!:) I browned the sausage first then removed to drain on paper towels while cooking down the sauce. I added the sausage back in for the last 20-25 minutes of cooking. For the "large tin" of whole tomatoes called for I used a 28oz can of whole plum tomatoes, and I also used all the juice form the can.
    For the dairy I used what I had on hand, Becel vegan margarine for the butter and lacto-free half&half for the cream. To make up for thicker cream I added a tablespoon of concentrated tomato paste (after cooking the onion, carrot, celery, garlic) to add more body to the sauce.
    The recipe calls for 3 cups of cooked rigatoni. DT used 1/2 pound for a 14.5oz can of tomatoes, and I used a whole pound for the 28oz can of tomatoes. I thought there was plenty of sauce to cover a whole pound of pasta. But if you like saucier pasta dishes then perhaps use a 12oz/340g box of pasta (assuming you're using a 28oz can of tomatoes).
    What I ended up with was very delicious! Everyone came back for seconds and asked that I make it again!
    My kitchen was very dark when I took the photo, so when I brightened the picture the colour came out looking orange. But it was a beautiful pink coloured sauce in person!

    The half & half is Lactantia brand, not sure if that brand is sold in the Maritimes? I get it at Superstore. Last time I was at Superstore, I saw they are carrying their own brand of lacto-free products--PC brand. I used their cream-cheese and made a cheesecake, it worked out well with no taste difference!
    I think this dish would still be good without the cream though. :)
