Sausage Vegetable Soup

*Made for the November 2017 Soup/Stew Challenge*

This is a delicious soup!! I made a couple of changes but nothing major. First I baked off my Italian sausage links first then sliced them and added to the cooking onion mixture instead of crumbling it. Next I used a red pepper instead of a green and last I left out the white wine, I didn't have it! Oh and I threw in a parmesan rind :) Very flavorful, and we loved it!!
