Sausage Vegetable Soup

- 1 lb of italian sausage shopping list
- 1 chopped medium onion shopping list
- 1 clove of minced garlic shopping list
- 2 peeled/ diced carrots shopping list
- 2 diced small zucchini shopping list
- 1 diced green pepper shopping list
- 1/2 c. of uncooked orzo pasta (rice-shaped pasta) shopping list
- 2/3 c. of freshly grated parmesan cheese shopping list
- 1/2 c. of dry white wine shopping list
- 5 c. of chicken broth shopping list
- 1 (28 oz) can of crushed tomatoes, in tomato puree shopping list
- 1 tsp. of dried basil shopping list
- 1/2 tsp. of dried oregano shopping list
- salt shopping list
- freshly ground pepper shopping list
How to make it
- First you want use the bulk sausage.
- Now cook the sausage in a pan, keep mashing with a spoon until the meat is cooked.
- Take off grease.
- Then add the onions and garlic and cook, stirring,until tender.
- Next add the carrots, zucchini, pepper, wine, chicken broth, tomatoes, basil, and oregano and bring to a boil.
- Now you can add the orzo and cook for approx. 20 minutes.
- This needs to be seasoned to taste with salt and pepper.
- Serve..

Made this for lunch today, it is a very tasty soup.
I left out the cheese(dairy issues) and i did not put the pasta in the soup.I cook the pasta separate from the soup, add to the bowl then add soup. I find if there is left over soup the pasta s...moreeastcoaster in loved it -
Good soup. I would use link sausage cut in small pieces rather than bulk sausage if I made it again. Parmesan cheese is mentioned on the ingredient list but not in the directions, therefore I forgot to add it to the soup.
