How to make it

  • First you want use the bulk sausage.
  • Now cook the sausage in a pan, keep mashing with a spoon until the meat is cooked.
  • Take off grease.
  • Then add the onions and garlic and cook, stirring,until tender.
  • Next add the carrots, zucchini, pepper, wine, chicken broth, tomatoes, basil, and oregano and bring to a boil.
  • Now you can add the orzo and cook for approx. 20 minutes.
  • This needs to be seasoned to taste with salt and pepper.
  • Serve..

    Made this for lunch today, it is a very tasty soup.
    I left out the cheese(dairy issues) and i did not put the pasta in the soup.I cook the pasta separate from the soup, add to the bowl then add soup. I find if there is left over soup the pasta swells and gets mushy.I used mild Italian sausage and did not add wine.
    I also added parsnip and turnip,they were going soft and they made a nice addition to the soup. Gave it a very nice flavor.
    We liked this very much.

    Good soup. I would use link sausage cut in small pieces rather than bulk sausage if I made it again. Parmesan cheese is mentioned on the ingredient list but not in the directions, therefore I forgot to add it to the soup.
