    **January Muffin Challenge**

    This little muffin comes with a BIG aroma and will have your house smelling like an Italian bistro. Be sure to have them in the oven when company arrives, but plan ahead. Lots of ingredients, prep work, and extra steps involved that make these time consuming. The results are worth it! I’ve actually made these twice now as Christinem’s recipe is also published on AR. My only suggestion is to watch them closely as they bake. I just happened to check these at 20min. and they were already done and came out dry and crumbly. I went back to my AR notes (which I should have done before I started) and saw that I wrote myself a note to pay close attention because they baked in half the time. Maybe I’m over drying the zucchini and that’s causing the baking time to be so off. I’ve made myself a note for the next time to make without drying the zucchini. Regardless, it is a fantastic recipe with amazing flavors. Thank you, Christinem for sharing!

    Your picture looks like it's straight from a magazine!! I have never made a savory muffin, sounds great to have around for a quick snack. Let us know how it goes next time you make them with the wet zucchini :)

    Thank you, Everyone! These particular muffins would go best with any dish that you would normally serve corn bread. I probably should have mentioned that in my review.
