Silverside Beef Pot Roast

    Silverside Beef Pot Roast by DonSpain

    Delicious! One of the best Pot Roast's I've made in a really long time!
    Here in Canada, Silverside beef is sold as an Outside-round roast (I think it's a bottom round or bottom flat in the US?). It's not a cut of beef I remember buying before, and I was pleasantly surprised by how good it was. No dry, chewy or sinewy bits in it. Perfectly cooked through-out with a nice beefy flavour. It sliced up beautifully without falling apart or becoming stringy.
    I order my food on-line, so what I end up with can be surprising, lol...They gave me a 1.5kg roast, so double the size as the recipe states. But it did fit in the pot, so I chose to cook the whole thing. (Which the whole family devoured by the way, with perhaps one roast beef sandwich worth of leftovers!;) But I kept the amounts of everything else the same--using all beef stock and no wine.
    I loved the parsnips in this, all the veg, aromatics and fresh thyme made for a delicious jus. I ended up with a bit more liquid but that's because I didn't leave the lid off a whole inch, I left it only a crack because I was worried the lid would fall off in the oven. Next time, I'll leave the lid off in the last 1/2 hour or so of cooking to reduce the liquid. Because of my blunder, the vegetables were a little too soft, so I mashed them up and mixed them into the mashed potatoes, which was delicious!
    I skimmed the fat from the jus and boiled it down slightly, thickened it with a little cream and finished with cracked black pepper. And served with creamed horseradish and peas on the side. The whole family loved it and I can't wait to make it again!
    I took this quick photo right after removing it from the oven, and I meant to get a plated photo of the meal so it looked more appetizing. But it begged to be eaten right away, it smelled too good to wait for a photo! ;)

    Thanks Ladies! I rarely follow a recipe when I do a pot roast, but will now! Everything is perfect in this. :)
    I forgot to mention above that even though I used a much larger roast mine was done in 2 hours, cooked at 325F.
