How to make it

  • Preheat the oven to 180c/360f/gas 4.
  • Season the silverside beef joint well with salt and pepper;
  • On a medium high heat put 1tbsp oil in a frying pan, add the joint and brown it on all sides;
  • Place the joint in a large ovenproof dish large enough for the joint and all the vegetables;
  • Put another 1tbsp oil into the frying pan add the vegetables and, on a medium high heat, evenly brown them all;
  • Arrange them around the joint in the ovenproof dish;
  • Put the final tbsp oil in the frying pan, add the garlic, wine, stock, bay leaf and thyme and, on a high heat, bring to the boil;
  • Pour contents into the ovenproof dish, cover, and put in the oven;
  • Cook for some 2 hours or so to mode desired - e.g. rare/medium/well done - turning the meat around halfway through;
  • Remove the bay leaf and thyme and serve the joint with the vegetables and Mash.

    One of the best pot roasts I've made in a long time! Here in Canada, Silverside beef is known as an Outside-Round roast, or bottom-round in the USA. It is perfect in this, stay's intact and slices up beautifully. All the vegetables and aromatics make for a delicious pot roast!
