Slow Cooker Chicken Taco Filling

    This was my first time ever making a Chicken Taco Filling. I tried Latinfoodie`s recipe.

    Slow Cooker Chicken Taco Filling

    I used boneless/skinless chicken thighs instead of breasts. I actually found a can of Rotel in our local grocery store. I think it`s an American thing and it`s not commonly found here in Canada. It was a small can, 289 ml and I didn`t want it to go to waste as the recipe only calls for 1/2 tin so I used the entire can. I didn`t add the 1/4 cup of water as I was worried about it being too liquidy even without the addition of water.

    It`s a simple, easy recipe. I noticed Michelle`s photo afterwards and realize I should have separated the chicken into smaller bits but it wasn`t a biggy. I did a Taco Bar for our dinner guests last night and this was part of it. Served it in both hard shell corn tacos and also soft tortilla shells. It was a hit.

    I have a fair amount extra. I used 6 thighs. I think I`ll turn the leftovers in to Quesadillas for dinner tonight.

    It`s a good recipe and I`ll use it again. I took a quick look at Latinfoodie`s profile and she`s got a lot of yummy looking recipes so I`d like to try out some more of hers.

    I love chicken tacos but haven't tried it in the crockpot yet. How cool you found Rotel in the store, I've never seen it here but will have to look now! :)

    Yours looks wonderful Janet!!! I'm glad you liked this :). It's nothing super fancy but when you need some easy and tasty on a busy night, this is the perfect recipe! That is crazy that Rotel is hard to find in Canada, I would have never thought!

    Thanks everyone. I beleive Rotel is an American product Michelle and I think they just started exporting to Canada this past fall.
