Spicy Cucumber Salad

*Made for the August 2017 Garden Vegetable Recipe Challenge*

My garden is COMPLETELY dead right now in this Texas heat, BUT my cucumber plant is thriving! I pick about 6-7 cucumbers a week lol. So I tripled this recipe to use more and next time I'll do it times 6, because it was that good! If you don't do spicy, this is not the recipe for you, it is SUPER spicy, but I loved it :) I have never had cooked cucumbers I don't think, so I was skeptical, but it was a nice change. No red onion in the house so i used yellow. I just ate some of this straight out of the bowl for lunch, but it would go great on an Asian burger or in a salad. Can't wait to dig into the rest of it!

I had an old German neighbour that would cook cucumbers all the time! I never heard of it until then either. This sounds really good, almost like eating a spicy pickle. :D

Taking a look at the recipe I have a question. Do you think if you did not cook the cucumbers, but just marinated them in the other ingredients, would you get the same flavour?

Thank you Janet! I think it would be worth a shot trying it by just marinating them in the ingredients. The ingredients are all good, so I couldn't imagine it turning out bad! Let us know if you do try it this way, I'm curious :)
