How to make it

  • In a small bowl combine the first seven ingredients then mix well.
  • Cut cucumbers in half lengthwise then crosswise into 1/4" slices.
  • In large non-stick skillet heat sesame oil over medium heat then add cucumbers and onion.
  • Cook stirring often for 2 minutes then add spice mixture and cook 1 minute longer.
  • Add lime juice and cook stirring often until most liquid is absorbed.
  • Transfer to a bowl and let cool then cover and refrigerate at least 3 hours to let flavors mellow.
  • Serve at room temperature.

    This is an addictive salad! My mouth was on fire, but that's okay, we like it spicy :) :) Cooking the cucumbers in the sesame oil was smart and gave the cucumbers a nice flavor. Can't wait to see what I can put the rest of these on!! More in the IMI II Group ----------> Spicy Cucumber Salad
