    ***March 2017 St. Patrick's Day Group Recipe Challenge***

    I love this classic Irish combination of caraway seeds and raisins, although I must confess I used fewer raisins than called for. This was good, but far from the best soda bread recipe I’ve made. This turned out dense, dry and didn’t raise like other soda breads. The dough itself was dry and I had to add about 2 Tbsp of extra buttermilk just to get it moist enough to pull together. On top of that, I over baked it. The recipe says to bake 45 – 50 minutes. I checked it at 40 and it was over baked by at least 5 min. or more. Hubby liked it which is why I’m giving it 3 stars. Said he preferred the dry, scone like texture. After comparing with my TNT recipe and other soda bread recipes, I see this one doesn’t use any eggs or baking powder, and has a smaller amount of baking soda. That explains why it didn’t raise and lacked the cake like texture.

    AW DIZ, sorry it did not work out. Myself i do not care for soda bread, what if you try dunking it in a hot drink?Might soften it up.

    Thanks everyone! No loss on the bread. Hubby loves the drier texture. He kept snacking on it all night. He ate half the loaf before I chased him out of it. Told him to save it for the leftover stew.

    Perfect Pic.!! Sorry it was dry, but at least your hubby loves it!! I like Eastcoaster's idea of dunking it in something if your wanting to enjoy it. Hot tea or coffee?
