Steak Fajitas

    I made this recipe but only added a few of the chipotles peppers. It was very good. The meat I bought was stir fry. Meat was a little tough even after marinating. I will make this again. Maybe I'll find a steak marked down. The meat manager told me that the steak with the redness gone is most tender. I thought, I don't want a steak that has gone bad. I had bought one, some time ago, and cooked it up and sure enough the steak was very tender and it tasted great! So I will be making this again when I buy marked down steaks.

    Sorry the meat didn't turn out very tender, Cheryl. I've never heard about steak being more tender if it isn't red. Maybe because it sits long enough in the fridge to age a bit before cooking. Aged beef is supposed to be more tender, so that may be what the meat manager was saying.

    That's too bad the meat wasn't very tender. Perhaps for the tougher meat just marinade longer, even overnight?
