Stuffed Portobello Mushrooms.

    I really wanted to try this recipe because I got the mushrooms on sale. They are quite expensive here. I have a dairy allergy so I had to make a few changes. In place of the cream cheese I used spreadable goat cheese. In place of the cheddar cheese I used lactose free Smoked Gouda Cheese.I also added some diced basil and rosemary, about 1/2 tablespoon of each. Both herbs go so well with parsley that’s why I added them.To me this screamed Onion, so I added I small diced onion.
    I try to make the recipe the first time as written, but with a dairy allergy it can be a challenge.
    We really enjoyed this and I will make it again. It truly is company worthy.

    Oh yummy Manella! Stuffed mushrooms are a favorite of mine! Portobello's are expensive here too, I don't buy them often. Glad your changed/additions worked, it really looks delicious :)

    Awesome photo, Manella! How nice to find mushrooms on sale. I love stuffed mushrooms, but have never made the giant meal sized portabellas. I've heard they are steak like. Mmm....smoke gouda, basil, rosemary, and onions. Just the thought is making me hungry.

    That looks lovely! I used to do stuffed Portebellos often when my son lived at home as he was vegetarian at the time. Haven't done them since and really should. Did you use sausage in yours? I think the goat cheese would probably be preferable to cream cheese anyway personally. The herbs and onion are a nice addition. Costco usually has a good price on portebellos but I honestly haven't even looked in a while.

    Awesome photo Manella! I'm not a mushroom fan but my hubby loves them-- he especially loves stuffed mushrooms so I make them for him on occasion. This looks so much easier than stuffing little mushrooms and I like the idea of sausage in them. :)
