    ***November Soup Challenge***

    Soup is on! This is a flavorful and filling soup. You couldn’t ask for a better “ready in minutes” meal! There really isn’t much to it other than opening a lot of cans. I’ve never heard of Creole flavored beans and was surprised to actually find them in my small town grocery store. The recipe didn’t specify whether or not to drain the cans. Similar recipes say drain, some say don’t. I drained everything except the Creole beans. I wanted all the flavor! This is a pretty spicy soup, but the ranch dressing helps cool it down. I like a thicker soup and only used half of the water so mine was more chili like. The only other change I made was using hominy instead of corn. Just a personal preference as I find it gives more of a corn “tortilla” taste. So good topped with chips, sour cream, cheese, and green onions.

    I like the idea of the ranch dressing mix. I've never heard of creole beans either, I guess that's what made it spicy?

    Thanks again, everyone! Cosmicmother, I believe the beans added a lot of spice. They smelled spicy! The rotels also do a good job of adding heat.
