Tembleque-coconut Pudding

    Tembleque Coconut Pudding
    Made for IMI2's May 2019 'Tropical' recipe challenge.

    My review: I wasn't sure about this never having had it but it was good. A little different taste than the diary milk custardy puddings I'm use to but not much. It is best served cold so be sure to chill it well. I like the hint of coconut from the coconut milk. I used full fat canned coconut milk.

    To me it had the consistency of something between Greek style and regular yogurt. It was different from regular pudding somehow but only in taste. It was soft and very creamy but not runny. I thought it didn't have the depth of flavor that a dairy based pudding has but it's good and ideal for someone who can't do dairy. Because I used canned coconut milk there was a slight after taste of the can that I could taste or could be the organic sugar I used which I swear is sweeter.

    Love the picture Linda, the pudding looks very glossy, or it could just be the way the light is hitting it lol. I think I would really enjoy this, especially dusted with cinnamon :)
