How to make it

  • In a saucepan mix together cornstarch, sugar and salt
  • Whisk in coconut milk and simmer over low to med heat
  • Stir constantly until the mixtue thickens
  • Pour into serving dishes, chill for at least an hour
  • Garnish with cinnamon, cinnamon sticks or toasted coconut

    I wasn't sure about this never having had it but it was good. A little different taste than the diary milk custardy puddings I'm use to but not much. It is best served cold so be sure to chill it well. I like the hint of coconut from the coconut milk. I used full fat canned coconut milk.

    Tembleque is one of the traditional desserts for Xmas in Puerto Rico. Yummi!!!

    The name tembleque is because the consistency of the dessert is like Jello. Temblar means shake in Spanish.
